You’ve probably noticed that bourbon is produced, and aged all over the U.S. Bourbon aging and production is no longer reserved for Kentucky. While Bourbon Country is still the source of many finished products around the U.S., many producers are choosing to age their barrels in climates that affect the aging process. Our Forty Nine Mile Bourbon is aged on the coast of North California. 

Aging Our Bourbon in CA

Each region has its own unique climate, grains, and regulations, which all affect the ultimate flavor of the bourbon. When it comes to aging barrels, hotter weather forces the bourbon to expand, seeping into the pores of the barrels and reacting with the oak to extract color, character, and aroma. When the bourbon cools in the colder months of California, it shrinks, letting the brown spirits flow back out of the wood along with all those extracted compounds from the barrel.

Outcome: Delicious Bourbon

The outcome is a delicious bourbon aged for seven years amid the rolling fog of San Francisco’s famed 49-Mile route. The aroma is rich vanilla and charred oak notes. Once it hits your mouth, you’ll taste sweet, full-bodied, butterscotch with bursts of citrus.
